  7. Process in a boiling water bath for 10 minutes for half-pint jars. Properly processed fruit preserves will store sealed for 12–18 months.
  8. For sugar-cured hams, pack the cavity of the ham with a 50/50 mix of salt and brown sugar. Smoke after curing for maximum shelf stability.

METHOD 3: VINEGAR PICKLING (Vegetables, Eggs, and More)

  1. Prepare your vegetables: wash thoroughly, trim ends, and cut uniformly. Cucumbers should be sliced or left whole with blossom ends removed — the blossom end contains enzymes that soften pickles.
